2 cups vegetable broth

2 cups fresh broccoli florets

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon nutmeg (optional)

Fresh parsley or chives for garnish (optional)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for approximately 15 minutes until the quinoa has absorbed all the liquid and is fluffy. Remove from heat, keep covered for an additional 5 minutes, then fluff the quinoa gently with a fork.

    Prepare the Broccoli: While the quinoa is cooking, bring a small pot of water to a boil. Once boiling, add the fresh broccoli florets and blanch for around 3 minutes until they turn vibrant green and are tender-crisp. Using a slotted spoon, transfer the broccoli to a bowl of ice water immediately to stop the cooking process. After a few minutes, drain the broccoli and set it aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent. Next, add the minced garlic and continue to cook for an additional minute, stirring frequently, until it is fragrant.

        Combine Ingredients: Reduce the heat and introduce the cooked quinoa to the skillet with the sautéed onion and garlic. Stir well to combine.
