2 cups vegetable or chicken broth

4 cups broccoli florets (fresh or frozen)

1 cup sharp cheddar cheese, grated (plus extra for topping)

1 cup cream of mushroom soup (store-bought or homemade)

½ cup sour cream

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon onion powder

½ teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

2 tablespoons olive oil

½ cup panko breadcrumbs (optional for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking your casserole.

    Cook the Rice: In a medium saucepan, combine the uncooked rice and broth. Bring the mixture to a boil, then reduce the heat to low and cover. Allow it to simmer for about 15-18 minutes, or until the rice is tender and the liquid has been absorbed. Once done, fluff the rice with a fork and set it aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, cooking for approximately 5 minutes or until the onion becomes soft and translucent. Next, stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to let it burn.

        Prepare the Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2 minutes, then promptly transfer them to a bowl of ice water to halt the cooking process. For frozen broccoli, simply thaw and drain it thoroughly.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, blanched (or thawed) broccoli, cream of mushroom soup, sour cream, and 1 cup of the grated cheddar cheese. Add the onion powder, garlic powder, salt, black pepper, and paprika. Mix everything together until fully combined for a creamy and flavorful mixture.

            Transfer to Baking Dish: Pour the combined mixture into a greased 9x13-inch baking dish. Spread it out evenly, then top with additional shredded cheddar cheese for that irresistible cheesy layer.

              Optional Topping: For an extra crunch, mix the panko breadcrumbs with a drizzle of olive oil before sprinkling them evenly over the layer of cheese.
