Creamy Cheesy Cauliflower Rice

1/2 cup cream cheese, softened to room temperature

1/4 cup grated Parmesan cheese

1/2 cup unsweetened almond milk (or milk of your choice)

1 tablespoon olive oil

2 cloves garlic, finely minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley or chives, finely chopped (for garnish, optional)

Instructions
 

Prep the Cauliflower: Start by removing the leaves and the thick stem from the cauliflower head. Chop the cauliflower into bite-sized florets. Rinse the florets thoroughly under cold water and allow them to drain in a colander.

    Rice the Cauliflower: In a food processor, pulse the cauliflower florets in batches until they take on a rice-like texture. Be cautious not to over-process, as you want to avoid a mushy consistency. Alternatively, if you prefer a manual method, you can grate the florets using a box grater.

      Sauté the Cauliflower Rice: Heat olive oil in a large skillet over medium heat. Add the riced cauliflower, along with the minced garlic, onion powder, garlic powder, salt, and pepper. Sauté the mixture for 5-7 minutes, stirring occasionally, until the cauliflower is tender but still slightly firm.

        Create a Creamy Mixture: Reduce the heat to medium-low and add the softened cream cheese to the skillet. Stir vigorously to combine, allowing the cream cheese to melt into the cauliflower mixture. Gradually pour in the almond milk while stirring continuously until the mixture reaches a creamy consistency.

          Incorporate the Cheeses: Once the cauliflower mixture is creamy, add the grated sharp cheddar and Parmesan cheese. Stir well until both cheeses are fully melted and evenly distributed throughout the dish.
