1 cup fresh or frozen corn kernels

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Optional: 1 cup diced potatoes (for added heartiness)

Sauté the Vegetables: Heat the olive oil in a large pot over medium heat. Once hot, add the diced onion, carrots, and celery. Sauté for approximately 5-7 minutes, until the vegetables soften and the onion turns translucent. Then, stir in the minced garlic and sauté for an additional minute until fragrant.
