2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 pound boneless, skinless chicken breasts, diced into bite-sized pieces

1 teaspoon Italian seasoning

5 ounces fresh baby spinach

1 cup heavy cream

1 cup low-sodium chicken broth

1 cup grated Parmesan cheese, plus extra for topping

2 cups shredded mozzarella cheese

1/2 teaspoon red pepper flakes (optional, for added heat)

Fresh basil, chopped, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package directions until al dente. Drain and set aside, returning to the pot to keep warm.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent. Stir in the minced garlic and continue to cook for an additional minute, until fragrant.

      Cook the Chicken: Add the diced chicken breasts to the skillet, seasoning them with Italian seasoning, salt, and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Stir in the fresh spinach and cook for about 2 minutes, or until just wilted.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, cooking for 3-4 minutes until the sauce slightly thickens. Gradually add 3/4 cup of the grated Parmesan cheese, stirring until it melts and creates a creamy sauce. If you'd like a bit of heat, add the red pepper flakes.
