8 oz. pasta (penne or fettuccine is ideal)

2 tablespoons olive oil

1 pound chicken breast, diced into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

4 cups fresh baby spinach, washed and dried

1 cup heavy cream

½ cup grated Parmesan cheese, plus extra for garnish

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional for heat)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions until just al dente. Drain the pasta and set aside, reserving a small cup of pasta water.

      Sauté the Chicken:

        In a large skillet over medium-high heat, warm the olive oil. Add the diced chicken pieces and season them with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and no longer pink inside. Remove the chicken from the skillet and set it on a plate.

          Sauté Garlic and Tomatoes:
