8 oz (225g) pasta (farfalle or penne preferred)

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, finely minced

5 oz (140g) fresh spinach, rinsed and drained

1 cup (240ml) heavy cream

1 cup (100g) freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and freshly cracked black pepper, to taste

¼ teaspoon red pepper flakes (optional, for a spicy kick)

Fresh parsley, chopped (for garnish)

Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Once cooked, drain the pasta and set it aside, reserving ½ cup of the pasta cooking water for later use.

    Sauté Chicken: Heat a large skillet over medium heat and add the olive oil. Once the oil is shimmering, add the diced chicken pieces. Season generously with salt, black pepper, and Italian seasoning. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is fully cooked and has a nice golden brown color. Remove the cooked chicken from the skillet and set it aside on a plate.

      Cook Garlic and Spinach: In the same skillet, add the minced garlic and sauté for about 30 seconds until it becomes fragrant and golden. Next, add the fresh spinach to the skillet and cook for about 2 minutes, stirring frequently, until the spinach is fully wilted and tender.

        Create Sauce: Lower the heat on the skillet. Carefully pour in the heavy cream, stirring gently to incorporate it with the garlic and spinach, while scraping any browned bits from the skillet bottom for added flavor. Gradually stir in the grated Parmesan cheese, continuing to mix until the cheese has melted and the sauce is rich and creamy.

          Combine Pasta and Chicken: Add the cooked pasta and the sautéed chicken back into the skillet. Use tongs or a spatula to toss everything together, ensuring that all ingredients are evenly coated in the creamy sauce. If the sauce seems too thick, slowly add some of the reserved pasta water until you achieve your desired creamy consistency.
