1 cup romaine lettuce, chopped

¼ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese (or vegan alternative)

¼ cup creamy Caesar dressing (store-bought or homemade)

4 large whole wheat or spinach tortillas

Fresh parsley, chopped (for garnish, optional)

Prepare the Chickpeas: In a spacious mixing bowl, add the drained and rinsed chickpeas. Drizzle with extra virgin olive oil, then sprinkle with garlic powder, smoked paprika, sea salt, and black pepper. Toss thoroughly until each chickpea is evenly coated with the seasoning mix.

Roast in the oven for 20-25 minutes, or until they are golden brown and crispy, shaking the pan halfway through cooking to ensure even crispiness.
