8 oz fettuccine or spaghetti

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 cloves garlic, finely minced

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly cracked black pepper, to taste

1 cup baby spinach (optional)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot filled with boiling salted water, cook the fettuccine or spaghetti according to the package instructions until al dente. Once cooked, drain the pasta and set it aside. Remember to reserve ½ cup of the pasta cooking water for later use.

      Sauté the Chicken:

        In a spacious skillet, heat the olive oil over medium-high heat. Add the bite-sized chicken pieces to the skillet, seasoning them generously with salt, pepper, and Italian seasoning. Sear the chicken for about 5-7 minutes, or until they are golden-brown and cooked through. Once cooked, remove the chicken from the skillet and set it aside on a plate.

            In the same skillet (don’t wash it!), add the minced garlic. Sauté it over medium heat for about 1 minute or until it becomes fragrant, being careful not to let it burn, as burnt garlic can taste bitter.
