Ingredients

12 oz penne pasta

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 cup fresh spinach, chopped

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional, for heat)

1 cup feta cheese, crumbled

1 cup Greek yogurt, plain

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures it’s hot and ready for your pasta bake.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Once done, drain the pasta and set it aside.

Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, toss in the diced onion and sauté for approximately 3-4 minutes until it becomes translucent. Next, add the minced garlic and continue to sauté for an additional minute, allowing the garlic to release its fragrant aroma.

Incorporate the Remaining Vegetables: Stir in the halved cherry tomatoes, diced bell pepper, chopped spinach, dried oregano, dried basil, and the optional red pepper flakes for a kick. Cook this vegetable mixture for about 3-5 minutes until the veggies soften. Season with salt and pepper to your liking.

Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta, sautéed vegetable medley, crumbled feta cheese, and Greek yogurt. Mix thoroughly to ensure all ingredients are well incorporated.

Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish, spreading it out evenly. Generously sprinkle the shredded mozzarella and grated Parmesan cheese over the top.

Bake: Place the dish in your preheated oven and bake for 25-30 minutes. The pasta bake is ready when the cheese is melted, bubbling, and has formed a golden crust on top.

Garnish and Serve: Once out of the oven, allow the dish to cool for a few minutes to set. Before serving, garnish with freshly chopped parsley for a pop of color and flavor.

                  Prep Time: 15 minutes | Total Time: 55 minutes | Servings: 6

                    - Presentation Tips: Serve this creamy pasta bake straight from the dish, ensuring each portion has a bit of the golden cheese topping. Pair with a simple green salad or crusty bread for a complete meal. Enjoy!
