Creamy Mushroom and Chicken Risotto Recipe

2 cups chicken broth (plus additional as needed)

1 cup dry white wine

1 cup cooked chicken, shredded

1 cup cremini mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

3 tablespoons olive oil

2 tablespoons butter

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Ingredients: Start by warming the chicken broth in a saucepan over low heat. Keeping it warm throughout the cooking process will help the risotto cook evenly.

    Sauté the Aromatics: In a large, heavy-bottomed skillet or pot, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Once melted, add the finely chopped onion and minced garlic. Sauté them for about 3-4 minutes, or until the onion becomes translucent and fragrant.

      Cook the Mushrooms: Add the sliced cremini mushrooms to the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the mushrooms are nicely browned and have released their moisture. Season the mixture with salt and pepper to enhance the flavors.

        Toast the Rice: Stir in the Arborio rice, letting it toast for 1-2 minutes while continuously stirring. This step boosts the flavor of the rice and prepares it for absorbing liquids.
