1 cup Arborio rice

1 cup green or brown lentils, rinsed and drained

4 cups vegetable broth (or chicken broth)

2 cups mushrooms (such as cremini or button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1/2 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)

1/2 cup heavy cream (or coconut cream for a vegan option)

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Prepare the Broth: In a medium saucepan over medium-low heat, warm the vegetable broth until it is steaming but not boiling. This will help the risotto cook evenly.

    Sauté the Aromatics: In a large skillet or pot, combine the olive oil and butter over medium heat. Once the butter is melted, add the finely chopped onion. Sauté for 3-4 minutes, stirring occasionally, until the onion becomes translucent. Add the minced garlic and cook for an additional minute, allowing the flavors to develop.

      Cook the Mushrooms: Stir in the sliced mushrooms, cooking them for about 5-7 minutes, or until they have released their moisture and are golden brown. Season them with a pinch of salt and pepper to enhance their flavor.

        Toast the Rice: Incorporate the Arborio rice into the skillet, stirring it thoroughly to coat the grains with the oil, butter, and mushroom mixture. Allow the rice to cook for 2-3 minutes until it turns slightly translucent around the edges.
