Creamy Mushroom Spinach Lasagna

12 sheets of lasagna noodles (can use no-boil or regular)

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

16 oz (approximately 450g) mushrooms, sliced (button or cremini work well)

5 oz (about 140g) fresh spinach, roughly chopped

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup heavy cream

1 cup vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

Salt, to taste

Black pepper, to taste

A pinch of nutmeg (optional)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for about 4-5 minutes until the onion turns translucent. Add the minced garlic and sauté for an additional minute until aromatic and fragrant.

      Cook the Mushrooms: Next, introduce the sliced mushrooms to the skillet. Season them with salt and freshly cracked black pepper. Cook the mushrooms for about 7-8 minutes, or until they've released their moisture and turned golden brown. Fold in the chopped spinach and stir until it wilts, which should take around 2-3 minutes. Once cooked, remove from the heat and allow to cool slightly.

        Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, half of the grated Parmesan, heavy cream, vegetable broth, dried oregano, dried basil, and the optional pinch of nutmeg. Season to taste with salt and pepper. Mix well until you have a creamy, consistent mixture.

          Assemble the Lasagna: In a 9x13-inch baking dish, spread a thin layer of the cheese mixture on the bottom to prevent the noodles from sticking. Lay three sheets of lasagna noodles over the sauce. Top with half of the mushroom and spinach mixture. Spread half of the remaining cheese sauce over the vegetables. Repeat this layering process, starting again with noodles, then mushrooms, and followed by the cheese mixture.

            Final Layer: For the topping, add a final layer of noodles, then generously spread the remaining cheese mixture on top. Finish by sprinkling the rest of the mozzarella and Parmesan cheese evenly over the entire dish.

              Bake: Cover the baking dish with aluminum foil (to prevent it from sticking, lightly spray the underside of the foil with cooking spray). Bake in the preheated oven for 25 minutes. After this, carefully remove the foil and continue baking for an additional 15-20 minutes, or until the top is beautifully golden and bubbly.

                Rest and Serve: Once baked, take the lasagna out of the oven and let it rest for 10-15 minutes to allow it to set. Slice into squares, serve hot, and savor your delightfully creamy mushroom spinach lasagna!
