2 cups rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup sweet corn (canned or frozen, thawed)

1/2 red onion, finely chopped

1 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1/2 cup fresh cilantro, chopped (or substitute with fresh basil for a unique twist)

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: Bring a large pot of generously salted water to a rolling boil. Add the rotini pasta and cook it according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold running water to halt the cooking process. Set the pasta aside to cool completely.

    Prepare the Vegetables: While the pasta is cooling, take a medium bowl and combine the halved cherry tomatoes, diced cucumber, red bell pepper, sweet corn, and finely chopped red onion. Mix gently to combine and set aside.

      Make the Dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, and garlic powder until the mixture is smooth and creamy. Season with salt and freshly ground black pepper to taste. It’s important to taste the dressing to ensure it meets your flavor preference—adjust as needed.

        Combine Ingredients: Once the pasta has cooled to room temperature, transfer it to the bowl containing the dressing.
