2 medium-sized beets, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

¼ cup tahini (sesame seed paste)

2 tablespoons extra virgin olive oil, plus more for drizzling

2 tablespoons freshly squeezed lemon juice

1 garlic clove, minced

½ teaspoon ground cumin

Salt and freshly ground black pepper, to taste

2-3 tablespoons water (adjust as needed for desired consistency)

Fresh herbs (such as parsley or dill) for garnish

Toasted sesame seeds for garnish (optional)

Instructions
 

Roast the Beets:

    - Preheat your oven to 400°F (200°C).

      - Wash the beets thoroughly and wrap them individually in aluminum foil. Place the wrapped beets on a baking sheet to catch any drips.

        - Roast in the preheated oven for approximately 45-60 minutes, or until a fork easily pierces through them. Once cooked, remove from the oven, allow to cool briefly, then peel off the skins and chop the beets into small chunks.

          Blend the Ingredients:

            - In a high-powered food processor, add the roasted beet chunks, drained chickpeas, tahini, olive oil, fresh lemon juice, minced garlic, and ground cumin.
