6 cloves of garlic, unpeeled

3 tablespoons olive oil, divided

Salt and black pepper, to taste

8 ounces of your preferred pasta (spaghetti or penne are excellent choices)

1 cup vegetable broth

1 cup heavy cream or coconut cream (for a dairy-free alternative)

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon dried thyme

1 teaspoon fresh lemon juice

Fresh parsley, finely chopped, for garnish

Red pepper flakes (for an optional kick of spice)

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting.

    Roast the Cauliflower and Garlic: On a large baking sheet, spread out the cauliflower florets and the unpeeled garlic cloves. Once boiling, add the pasta and cook according to the package instructions until al dente. Before draining, reserve about 1 cup of the pasta cooking water, then drain and set the pasta aside.
