Ingredients

1 pound elbow macaroni

1 head of garlic

2 tablespoons olive oil

2 cups heavy cream

1 cup whole milk

4 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt (to taste)

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for extra heat)

Fresh parsley, chopped (for garnish)

Instructions

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off the head of garlic, exposing the individual cloves. Drizzle the garlic with olive oil and wrap it tightly in aluminum foil. Place it on a baking sheet and roast in the preheated oven for 30-35 minutes, or until the cloves are soft and golden caramelized. Once done, remove from the oven and allow it to cool slightly before handling.

Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente (usually about 8-10 minutes). Once cooked, drain the pasta and set aside, reserving a small cup of pasta water for later just in case.

Prepare the Cheese Sauce: In a large saucepan, combine the heavy cream and whole milk. Heat over medium heat, stirring occasionally until the mixture is just about to simmer. Reduce the heat to low and gradually add the shredded sharp cheddar cheese and grated Parmesan cheese. Stir continuously until all the cheese is fully melted and the sauce is creamy and smooth.

Incorporate the Flavors: Squeeze the roasted garlic cloves out of their skins and into the cheese sauce. Use a whisk to blend the garlic thoroughly into the sauce, ensuring no lumps remain. Next, add the onion powder, garlic powder, salt, black pepper, and cayenne pepper (if you like a little heat). Stir well until all spices are well incorporated into the sauce.

Mix Pasta with Cheese Sauce: Gently fold the cooked macaroni into the creamy cheese sauce, mixing until all the pasta is evenly coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Serve: Transfer your creamy roasted garlic mac & cheese into a large serving dish or individual bowls for a more personal touch. For a finishing touch, sprinkle with chopped fresh parsley to add a pop of color and a hint of freshness.

Enjoy: Serve your deliciously creamy garlic mac & cheese hot, and dig in to savor the delightful flavors!
