3 large red bell peppers

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for extra heat)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Roast the Red Peppers: Preheat your oven to 425°F (220°C). Slice the red bell peppers in half lengthwise and remove the seeds and ribs. Place them cut side down on a lined baking sheet and drizzle with 1 tablespoon of olive oil. Roast in the oven for 25-30 minutes, or until the skin is charred and blistered. Once roasted, transfer the peppers to a bowl, cover with plastic wrap, and let steam for about 10 minutes. This will make peeling easier. After cooling, carefully peel off the skins and set the roasted peppers aside.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Drain the pasta, reserving one cup of the pasta water for later use if needed.

      Prepare the Sauce: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until it becomes translucent and soft. Stir in the minced garlic, dried basil, oregano, and red pepper flakes (if using). Cook for an additional 2 minutes, stirring frequently to release the flavors.
