Creamy Roasted Tomato Pasta

2 pints cherry tomatoes, halved

4 cloves garlic, unpeeled

3 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

12 ounces pasta (fettuccine or your preferred type)

1/2 teaspoon red pepper flakes (optional, for added spice)

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Roast the Tomatoes:

    Preheat your oven to 400°F (200°C). On a large baking sheet, combine the halved cherry tomatoes and unpeeled garlic cloves. Drizzle with olive oil, then season generously with salt and freshly ground black pepper. Spread everything out in a single layer to ensure even roasting. Place the baking sheet in the oven and roast for 25-30 minutes, or until the tomatoes are blistered and caramelized.

      Prepare the Pasta:

        While the tomatoes roast, fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil. Add the pasta to the boiling water and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta water for later use. Drain the pasta and set it aside.

          Make the Creamy Sauce:

            Once the tomatoes are done roasting, remove the baking sheet from the oven and let the garlic cool for a few minutes. Peel the garlic cloves and mince them finely. In a large skillet over medium heat, add the roasted tomatoes along with all their juices, the minced garlic, and the heavy cream. Stir to combine, allowing the mixture to simmer for about 5 minutes. This will let the flavors meld beautifully.

              Incorporate Cheese:
