Ingredients

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cremini mushrooms, diced

1 cup cream cheese, softened to room temperature

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon olive oil (plus extra for searing)

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a hint of heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven:

Preheat your oven to 375°F (190°C) so it's ready for baking the chicken.

      Prepare the Filling:

        - In a large skillet, heat 1 tablespoon of olive oil over medium heat.

          - Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

            - Incorporate the diced mushrooms and cook for 5-7 minutes, stirring occasionally, until they're tender and have released their moisture.

              - Stir in the chopped spinach and sauté for an additional 2-3 minutes until the spinach has wilted. Remove the skillet from heat.

                - In a separate mixing bowl, combine the cooked mushroom and spinach mixture with softened cream cheese, grated Parmesan cheese, shredded mozzarella cheese, oregano, salt, black pepper, and red pepper flakes (if using). Mix thoroughly until well combined.

                  Stuff the Chicken:

                    - Use a sharp knife to carefully create a pocket in the side of each chicken breast, making sure not to cut through the other side.

                      - Generously spoon the creamy spinach and mushroom filling into each chicken breast pocket, pressing gently to ensure the filling is compact.

                        Sear the Chicken:

                          - Return the skillet to the stovetop and add a little more olive oil, heating it over medium-high heat.

                            - Place the stuffed chicken breasts in the skillet and sear for approximately 3-4 minutes on each side until golden brown and a lovely crust forms.

                              Bake the Chicken:

                                - After searing, transfer the stuffed chicken breasts to a greased baking dish.

                                  - Cover the dish with aluminum foil to keep the moisture in, and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

                                    - For a golden top, remove the foil and return the dish to the oven for an additional 5-10 minutes.

                                      Garnish and Serve:

                                        - Remove the chicken from the oven and allow it to rest for a few minutes to retain its juices.

                                          - Just before serving, sprinkle freshly chopped parsley on top for a burst of color and freshness.
