1 lb ground turkey

1 tablespoon olive oil

3 cloves garlic, minced

10 oz frozen spinach, thawed and well-drained

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg, beaten

2 cups marinara sauce

Salt and freshly ground pepper to taste

Fresh basil for garnish (optional)

Cook the Pasta: Begin by bringing a large pot of salted water to a rapid boil. Add the jumbo pasta shells and cook according to the package directions, usually about 9-11 minutes, until they are al dente. Drain the pasta in a colander and set them aside to cool for a few minutes.

    Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, which will take about 3-4 minutes. Next, stir in the minced garlic, followed by the ground turkey, dried Italian herbs, and red pepper flakes if you wish to add some spice. Cook this mixture until the turkey is evenly browned and fully cooked through, breaking it into small pieces with a wooden spoon, around 6-8 minutes. Season the filling with salt and freshly ground pepper to your liking.
