Creamy Spinach Artichoke Pasta

8 oz (225g) pasta (fettuccine or penne)

1 tablespoon olive oil

3 cloves garlic, finely minced

1 cup fresh spinach, roughly chopped

1 cup canned artichoke hearts, drained and quartered

1 cup cream cheese, softened to room temperature

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning blend

½ teaspoon red pepper flakes (optional for a kick)

Salt and freshly cracked black pepper, to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: Fill a large pot with generously salted water and bring it to a rolling boil. Add the pasta and cook according to the package directions until al dente. Before draining, reserve ½ cup of the pasta water to adjust the sauce consistency later. Drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to let it burn. Add the chopped spinach and quartered artichoke hearts to the skillet, cooking for an additional 2-3 minutes until the spinach is wilted and the artichokes are warmed through.

      Prepare the Creamy Sauce: Reduce the heat to low and add the softened cream cheese to the skillet. Stir continuously until the cream cheese melts and combines smoothly with the sautéed vegetables. Gradually pour in the heavy cream, stirring to achieve a creamy, cohesive sauce.

        Incorporate Flavor: Gently stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if desired).
