Ingredients

12 oz fettuccine pasta

2 cups fresh spinach, roughly chopped

2 tablespoons olive oil

3 cloves garlic, finely minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and black pepper, to taste

A pinch of red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring generously salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the starchy pasta water for later, then drain the fettuccine in a colander and set it aside.

Sauté the Spinach: In a spacious skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute until it becomes fragrant, ensuring it doesn’t burn. Next, add the chopped spinach to the skillet, cooking it until wilted and tender, about 2-3 minutes. Season with a pinch of salt and black pepper to enhance the flavor.

Make the Alfredo Sauce: Reduce the heat to low and pour the heavy cream into the skillet with the sautéed spinach and garlic. Stir gently to combine and let it simmer for 2-3 minutes, allowing the flavors to meld. Gradually whisk in the grated Parmesan cheese, stirring continuously until the sauce is silky and creamy. If the sauce seems too thick, gradually add reserved pasta water, one tablespoon at a time, until you achieve your desired consistency.

Combine Pasta and Sauce: Add the drained fettuccine directly into the skillet with the creamy Alfredo sauce. Toss the pasta gently to ensure it is thoroughly coated. Sprinkle in the Italian seasoning and red pepper flakes (if using), then adjust the seasoning with additional salt and pepper to your liking.

Serve: If desired, garnish your pasta with fresh basil leaves for a pop of color and flavor. Dish out the pasta immediately while hot, and serve with extra grated Parmesan cheese on the side for those who love an extra cheesy finish.
