Ingredients

2 ripe avocados, peeled and pitted

1 large cucumber, peeled and roughly chopped

1 cup Greek yogurt

1 cup vegetable broth, chilled

1/4 cup fresh lime juice (approximately 2 limes)

1/2 cup fresh basil leaves, plus additional for garnish

1 clove garlic, minced

Salt and freshly ground black pepper, to taste

1 tablespoon extra virgin olive oil

Optional: 1 jalapeño pepper, seeds removed and finely chopped, for added heat

Instructions

Blend the Base: In your blender, combine the ripe avocados, chopped cucumber, Greek yogurt, and chilled vegetable broth. Blend the ingredients on high speed until you achieve a creamy and smooth consistency. If the mixture is too thick for your preference, gradually add more vegetable broth until desired thickness is reached.

Add Flavor: Zest the limes first, reserving the zest. Then, squeeze in the fresh lime juice, along with the basil leaves, minced garlic, and the optional jalapeño (if you choose to include the heat). Blend again until all components are evenly mixed and vibrant.

Season the Soup: Taste the creamy mixture and adjust the flavor by seasoning it with salt and freshly ground black pepper to your liking. Blend a final time to ensure the seasonings are well incorporated.

Chill the Soup: Pour the blended soup into a large bowl or airtight container. Cover it tightly and refrigerate for at least 1 hour. This chilling time allows the flavors to meld beautifully and ensures the soup is served refreshingly cold.

Serve Elegantly: When ready to serve, ladle the chilled soup into bowls. Drizzle each serving with a touch of extra virgin olive oil, and garnish generously with fresh basil leaves. For added sophistication, consider topping each bowl with a few thin slices of avocado or cucumber.

Savor the Flavor: Enjoy this refreshing soup as a delightful starter or a light main course on a warm summer day, perfect for entertaining or simply relishing the season.
