Creamy Tomato Basil Chicken Thighs

4 bone-in, skin-on chicken thighs

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

½ teaspoon Italian seasoning

1 cup fresh spinach

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Season the Chicken: Begin by patting the chicken thighs dry with paper towels to remove excess moisture. Generously season both sides of the chicken with salt and black pepper for enhanced flavor.

    Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When the oil is hot, carefully add the chicken thighs skin-side down. Sear for approximately 5–7 minutes until the skin is beautifully golden and crispy. Carefully flip the chicken and continue cooking for another 5 minutes. Once done, transfer the chicken to a plate and set aside.

      Sauté Garlic: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds or until fragrant, making sure to stir constantly to prevent the garlic from burning.

        Add Tomatoes: Pour in the can of diced tomatoes along with their juices. Stir well to combine and scrape up any brown bits from the bottom of the skillet for added flavor.

          Create the Sauce: Incorporate the heavy cream, dried basil, and Italian seasoning into the skillet. Bring the mixture to a gentle simmer, stirring frequently to ensure the cream is blended smoothly into the sauce.

            Combine & Simmer: Return the seared chicken thighs to the skillet, placing them skin-side up. Use a spoon to drizzle some of the sauce over the chicken. Cover the skillet and let it simmer on low heat for about 25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

              Add Spinach & Cheese: In the final 5 minutes of cooking, stir in the fresh spinach and grated Parmesan cheese. Mix until the spinach wilts and the cheese is melted, enriching the sauce with extra creaminess.

                Serve: Carefully plate each chicken thigh and generously spoon the creamy tomato basil sauce over the top. For a finishing touch, garnish with fresh basil leaves and an additional sprinkle of grated Parmesan cheese, if desired.
