One of the keys to achieving the perfect sauce consistency for your Creamy Dreamy Tomato Basil Pasta is the careful use of reserved pasta water. As you cook your pasta, set aside a cup of the starchy water before draining. This water contains starch that helps bind the sauce to the pasta, creating a silky texture.

Ingredients

8 oz (225 g) penne pasta

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 can (14 oz) crushed tomatoes (San Marzano if available for sweetness)

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon sugar (optional, to balance acidity)

Salt and freshly ground black pepper, to taste

1 cup fresh basil leaves, roughly chopped

½ cup freshly grated Parmesan cheese, plus extra for serving

Additional fresh basil leaves and Parmesan for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a rapid boil. Add the penne pasta and cook according to the package directions until al dente (typically 8-10 minutes). Once cooked, reserve about ½ cup of the pasta water, then drain the pasta and set it aside.

Sauté the Garlic: In a spacious skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for about 1 minute, stirring constantly until it becomes fragrant and slightly golden. Be careful not to let it burn to preserve its flavor.

Prepare the Sauce: To the skillet, add the crushed tomatoes, stirring well to combine. Gradually pour in the heavy cream, followed by the dried oregano and sugar (if using). Bring the mixture to a gentle simmer, allowing it to cook for about 5-7 minutes. Stir occasionally to ensure even cooking and to prevent sticking.

Season the Sauce: Taste the sauce and adjust the seasoning by adding salt and freshly ground black pepper according to your liking. If the sauce is thicker than desired, incorporate some of the reserved pasta water, a little at a time, until you achieve a creamy consistency that clings to the pasta.

Combine Pasta and Sauce: Once the sauce is seasoned to perfection, add the cooked penne pasta directly into the skillet. Toss gently to coat the pasta in the creamy tomato sauce. Fold in the freshly chopped basil leaves and the grated Parmesan cheese, mixing thoroughly until everything is well combined.

Serve: To plate, serve the creamy tomato basil pasta in warm bowls or on plates. Garnish generously with extra basil leaves and a sprinkle of grated Parmesan cheese. Enjoy this comforting dish warm, sharing it with family and friends!
