Ingredients

1 cup quinoa, rinsed and drained

2 cups vegetable broth

1 can (15 oz) crushed tomatoes

1 cup heavy cream (or substitute with coconut cream for a dairy-free variation)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup fresh basil leaves, chopped

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese (or vegan cheese for a dairy-free option)

½ cup grated Parmesan cheese (or nutritional yeast as a substitute for dairy-free)

Olive oil, for sautéing

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with the vegetable broth. Bring the mixture to a boil over medium heat, then reduce to low and cover. Let it simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid has been absorbed. Remove from heat and set aside to cool slightly.

Sauté Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté for approximately 5 minutes, or until it becomes translucent. Incorporate the minced garlic and continue sautéing for an additional 1-2 minutes, until the garlic becomes fragrant and golden.

Combine Ingredients: In a large mixing bowl, combine the fluffy quinoa, crushed tomatoes, heavy cream, sautéed onion and garlic, chopped basil, dried oregano, salt, and black pepper. Mix thoroughly until all ingredients are firmly blended.

Add Cheese: Gently fold in half of the shredded mozzarella and half of the grated Parmesan (or their dairy-free alternatives) into the quinoa mixture, ensuring an even distribution.

Transfer to Baking Dish: Lightly grease a 9x13-inch baking dish with olive oil. Pour the creamy quinoa mixture into the dish, spreading it evenly across the surface.

Top with Cheese: Evenly sprinkle the remaining mozzarella and Parmesan cheese on top of the quinoa mixture, allowing for a cheesy, golden crust when baked.

Bake: Place the baking dish in the preheated oven. Bake for 25-30 minutes, or until the top is bubbly and golden brown.

Garnish and Serve: Once removed from the oven, allow the bake to cool for about 5 minutes. Garnish with additional fresh basil leaves for a pop of color and extra flavor before serving.

Enjoy this delightful Creamy Tomato Basil Quinoa Bake as a comforting main dish or a hearty side!
