Ingredients

20 jumbo pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta:

    - Begin by bringing a large pot of salted water to a boil. Once boiling, add the jumbo pasta shells and cook according to the package instructions until they are al dente. This usually takes about 8-10 minutes. After cooking, drain the shells and lay them out on a baking sheet to cool and prevent them from sticking together.

      Prepare the Filling:

        - While the shells are cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for approximately 1 minute, or until fragrant.

          - Next, add the ground turkey to the skillet. Use a spatula to break it apart as it cooks. Continue cooking for about 5-7 minutes, or until the turkey is browned and fully cooked through.

            - Stir in the chopped spinach and cook for an additional 2-3 minutes, just until the spinach is wilted. Once done, remove the skillet from the heat and set it aside to cool slightly.

              Mix the Cheese Filling:

                - In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, Italian seasoning, salt, and black pepper. Mix thoroughly until the ingredients are combined into a smooth filling.

                  - Once the turkey and spinach mixture has cooled a bit, fold it into the cheese mixture, stirring until well blended.

                    Stuff the Shells:

                      - Preheat your oven to 350°F (175°C).

                        - In a 9x13-inch baking dish, spread half of the marinara sauce evenly on the bottom.

                          - Using a spoon or a piping bag for ease, carefully fill each jumbo pasta shell with the creamy turkey and spinach filling. Arrange the filled shells in the baking dish with the opened side facing up.

                            Top and Bake:

                              - Drizzle the remaining marinara sauce over the stuffed shells, ensuring they are well coated. Sprinkle additional mozzarella cheese generously on top for a deliciously cheesy finish.

                                - Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and has turned a lovely golden color.

                                  Garnish and Serve:

                                    - Once baked, remove the dish from the oven and allow it to cool for a few minutes before serving. For a fresh touch, garnish with a few sprigs of basil if desired.
