Creamy Turkey Stuffed Peppers

4 large bell peppers (choose any color you prefer)

1 lb ground turkey

1 cup cooked rice (you can use brown or white rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

1 teaspoon dried Italian herbs (a mix of basil, oregano, and thyme)

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced tomatoes (either canned or fresh will work)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking the peppers.

    Prepare the Peppers: Take the bell peppers and carefully cut off the tops. Remove the seeds and membranes inside. If you like, finely chop the tops you removed and set them aside to incorporate into the filling for added flavor.

      Cook the Turkey Mixture: In a large skillet, heat a drizzle of oil over medium heat. Add the finely chopped onion and minced garlic, sautéing them until they become soft and fragrant, which will take about 3-4 minutes. Then, add the ground turkey, breaking it apart with a spatula. Cook until the turkey is browned and no longer pink, approximately 5-7 minutes.

        Mix Ingredients: Reduce the heat to low. Stir in the cooked rice, softened cream cheese, shredded mozzarella, diced tomatoes, Italian herbs, paprika, salt, and black pepper to the skillet. Mix everything together until the filling is creamy and well combined, ensuring all ingredients are evenly distributed.

          Stuff the Peppers: Spoon the creamy turkey mixture into each of the prepared bell peppers. Pack the filling down gently to ensure each pepper is well filled. Arrange the stuffed peppers upright in a baking dish.

            Bake the Peppers: Cover the baking dish tightly with aluminum foil. Place it in the preheated oven and bake for 25 minutes. After this time, carefully remove the foil and continue to bake for an additional 10-15 minutes until the peppers are tender and the cheese on top is melted, bubbly, and lightly golden.

              Garnish and Serve: Once the stuffed peppers are done baking, take them out of the oven and let them cool for a few minutes. Just before serving, sprinkle with chopped fresh parsley for a pop of color and freshness.
