Ingredients

4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

1/4 teaspoon red pepper flakes (optional, for a touch of heat)

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Lightly season both sides of the chicken breasts with salt and black pepper, ensuring an even coating for flavor.

Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Cook for approximately 6-7 minutes on each side, or until they develop a beautiful golden brown crust and are fully cooked through (the internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside on a plate.

Sauté Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant. Then, add the halved cherry tomatoes, cooking for an additional 2-3 minutes until they start to soften and release their juices.

Add Spinach: Incorporate the fresh spinach into the skillet, stirring gently until just wilted, which should take around 2 minutes.

Make Sauce: Lower the heat to medium-low, then pour in the heavy cream. Gradually add the grated Parmesan cheese, dried Italian herbs, and red pepper flakes (if desired). Stir well to combine and let the sauce simmer for 3-4 minutes, thickening slightly as it cooks.

Combine: Return the seared chicken to the skillet, spooning the creamy sauce generously over each piece. Allow the chicken to simmer in the sauce for another 2-3 minutes until warmed through and coated in the rich, flavorful cream sauce.

Serve: Plate the creamy Tuscan chicken and garnish with fresh basil leaves for a burst of color and freshness. This dish pairs wonderfully with your choice of pasta, rice, or crusty bread—perfect to soak up all the delectable sauce!
