Ingredients

2 medium zucchinis

1 cup breadcrumbs (whole wheat or gluten-free for a healthier choice)

1/2 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt (adjust to personal taste)

1/4 teaspoon black pepper

2 large eggs (or 1/4 cup unsweetened applesauce for a vegan option)

Cooking spray or olive oil for misting

Instructions

Prep the Zucchini: Begin by thoroughly washing the zucchinis under cool running water. Cut them into thin rounds, around 1/4 inch thick. For precision and uniformity, consider using a mandoline slicer.

Prepare the Coating: In a shallow dish, combine the breadcrumbs with the grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix these dry ingredients well to ensure even distribution of flavors.

Prepare the Egg Wash: In another shallow bowl, beat the eggs or mix in the applesauce. This mixture will help the breadcrumb coating stick to the zucchini slices effectively.

Coat the Zucchini Slices: Take each zucchini slice and dip it into the egg wash, making sure it's thoroughly coated. Then, transfer the slice to the breadcrumb mixture. Press down gently to secure the crumbs on each slice. Repeat this process until all zucchini slices are coated.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes, ensuring it reaches the desired temperature for optimal cooking.

Arrange in the Air Fryer: Lightly spray the air fryer basket with cooking spray or brush it with a bit of olive oil. Place the coated zucchini chips in a single layer in the basket, making sure they do not overlap. Depending on the size of your air fryer, you might need to cook them in batches.

Air Fry: Cook the zucchini chips for 10-12 minutes, shaking the basket halfway through the cooking time for even crisping. Check for doneness; they should be golden brown and crispy. If you desire extra crunch, you can cook them for an additional 2-3 minutes, but keep a close watch to prevent burning.

Serve: Once the zucchini chips are crispy, remove them from the air fryer and let them cool on a wire rack for a few minutes to maintain their crunchiness. Serve them warm as a delightful snack or appetizer alongside your favorite dips such as marinara sauce or tzatziki.
