Ingredients

4 slices of hearty sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy cooked bacon

2 large eggs

2 tablespoons of unsalted butter, softened

Salt and black pepper, to taste

A dash of your favorite hot sauce (optional)

Fresh chives, finely chopped, for garnish (optional)

Instructions

Prepare the Bacon and Eggs:

    - In a skillet over medium heat, cook the bacon slices until they are crispy and golden brown. Once cooked, transfer the bacon to a plate lined with paper towels to absorb excess grease.

      - Using the same skillet, crack the eggs gently and cook them sunny-side up until the whites are set but the yolks remain runny, or cook them to your preferred doneness. Season the eggs with a sprinkle of salt and black pepper. If you enjoy a kick, add a dash of hot sauce to the eggs during cooking.

        Assemble the Sandwich:

          - Spread a layer of softened butter evenly on one side of each slice of sourdough bread.

            - On the unbuttered side of two slices, lay down two slices of sharp cheddar cheese. Top this with two slices of crispy bacon and then the cooked eggs. Finish the assembly by stacking the second slices of cheddar cheese on top before placing the remaining slices of bread, buttered side facing out, to close the sandwich.

              Grill the Sandwich:

                - Heat a skillet over medium heat. Carefully place the assembled sandwich in the skillet and grill it for about 3-4 minutes, or until the bread is beautifully golden brown and crispy. Gently flip the sandwich over and continue cooking for another 3-4 minutes until the other side is equally golden and the cheese has melted to a gooey consistency.

                  Serve:

                    - Once grilled, remove the sandwich from the skillet and allow it to cool for a minute. Slice the sandwich in half to reveal the oozy egg and melted cheese within. If desired, sprinkle with freshly chopped chives for a pop of color and flavor. Serve immediately while hot.
