Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko breadcrumbs (for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper to taste

2 large eggs

Cooking spray or a drizzle of olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While it's heating, line a baking sheet with parchment paper or lightly grease it using cooking spray to prevent sticking.

Prepare the Zucchinis: Take the zucchinis and rinse them under cold water. Cut off both ends, then slice each zucchini into fries about 1/4 inch thick. You can opt for stick-shaped fries or round disks, depending on how you like your fries.

Set Up Breading Stations: For the breading process, you’ll need two shallow bowls. In the first bowl, whisk together the eggs until well combined. In the second bowl, mix together the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, dried oregano, smoked paprika, salt, and black pepper. Stir until the dry ingredients are thoroughly blended.

Bread the Zucchini Fries: Take each zucchini fry and first dip it into the egg mixture, allowing any excess egg to drip off. Next, coat it well with the Parmesan-breadcrumb mixture by pressing gently to ensure the dry mixture adheres nicely to the fry. Arrange the coated zucchini fries on the prepared baking sheet in a single layer to ensure even cooking.

Add Oil: For that delightful extra crunch, lightly spray the tops of the zucchini fries with cooking spray or drizzle a small amount of olive oil over them.

Bake: Place the baking sheet in your preheated oven. Bake for 20-25 minutes, or until the zucchini fries are golden brown and crispy. Remember to flip them halfway through the baking time to promote even crispiness on all sides.

Serve and Garnish: Once baking is complete, remove the fries from the oven and let them cool for a couple of minutes. If you like, sprinkle with fresh chopped parsley for a burst of color and flavor before serving. Enjoy your crispy zucchini fries immediately with your favorite dipping sauce, like marinara or ranch.
