Crispy Chicken Avocado Rice Wraps

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional for extra heat)

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

1 ripe avocado, thinly sliced

1 cup shredded lettuce (romaine or green leaf)

½ cup cherry tomatoes, halved

¼ cup sliced green onions

4 large rice paper wraps

Soy sauce or tamari for dipping

Instructions
 

Prepare the Chicken:

    - In a mixing bowl, season the chicken thighs evenly with paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Make sure every piece is well-coated with the seasoning for maximum flavor.

      Cook the Chicken:

        - Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the seasoned chicken thighs to the skillet. Cook them for approximately 5-7 minutes per side until they are golden brown and fully cooked through (the internal temperature should reach 165°F or 75°C). Once cooked, remove the chicken from the skillet and allow it to cool slightly before slicing into thin strips.

          Prepare the Rice Paper Wrappers:

            - In a shallow dish, pour in warm water. Submerge one rice paper wrap into the water for about 10-15 seconds, or until it becomes pliable and soft enough to handle but not overly mushy. Remove it from the water and lay it flat on a clean and dry surface.

              Assemble the Wraps:

                - On the lower half of the rice paper wrap, place approximately ½ cup of cooked jasmine rice. Layer on a few strips of the crispy chicken, followed by a couple of avocado slices, a handful of shredded lettuce, some halved cherry tomatoes, and a sprinkle of green onions. Be mindful not to overfill the wrap so that it can be rolled easily.

                  Roll the Wraps:

                    - Begin by folding the sides of the rice paper inward over the filling, then start rolling from the bottom up to create a tight and secure wrap. Ensure that the filling remains contained as you roll. Repeat this process with the remaining rice paper wraps and filling ingredients.

                      Serve:
