Ingredients
  

  • 1.5 lbs sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper
  • 0.5 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh chives
  • to taste salt
  • to taste black pepper

Instructions
 

  • Start by peeling the sweet potatoes and cutting them into evenly sized fries, about 0.25 inch thick. This ensures even cooking.
  • In a large mixing bowl, combine the sweet potato fries with olive oil, paprika, garlic powder, sea salt, black pepper, and cayenne pepper (if using). Toss until the fries are well coated.
  • Preheat your air fryer to 375 for about 5 minutes while you prepare the dip.
  • Place the seasoned sweet potato fries in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer. Air fry for 15-20 minutes, shaking the basket halfway through, until the fries are golden brown and crispy.
  • While the fries are cooking, prepare the herb dip. In a small bowl, mix together Greek yogurt, mayonnaise, lemon juice, and Dijon mustard. Stir in the chopped dill and chives, and season with salt and pepper to taste.
  • Once the fries are cooked, remove them from the air fryer and garnish with fresh parsley. Serve them hot with the herb dip on the side.
