2 large russet potatoes, scrubbed and thinly sliced

1 cup shredded Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 small red onion, finely chopped

1 jalapeño, diced (optional for heat)

1 cup grape tomatoes, halved

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt, for serving

Fresh cilantro, chopped, for garnish

Sliced green onions, for garnish

Instructions
 

Preheat Oven: Begin by preheating your oven to 425°F (220°C) to get it hot and ready for the crispy potatoes.

    Prepare Potatoes: In a large mixing bowl, toss your thinly sliced potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Ensure each slice is evenly coated for maximum flavor and crispiness.

      Spread and Bake: Arrange the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping the slices halfway through to achieve even browning and crispiness.

        Sauté Vegetables: While the potatoes are baking, heat a skillet over medium heat. Add the chopped red onion and diced jalapeño (if you’re using it for extra spice). Sauté for about 5 minutes until the onion softens. Next, add the halved grape tomatoes and cook for another 2-3 minutes until they start to blister and release their juices.

          Combine Ingredients: Once the potatoes are crispy and golden, take them out of the oven and lower the oven temperature to 375°F (190°C). In your skillet, layer the baked potato slices with the sautéed vegetable mixture and the rinsed black beans.
