1 lb chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

2 tsp ranch seasoning mix (plus extra for seasoning)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt & pepper to taste

Vegetable oil (for frying)

4 large tortillas (flour or whole wheat)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/2 cup ranch dressing

Optional: avocado slices for garnish

Instructions
 

Marinate the Chicken:

    In a mixing bowl, whisk together the buttermilk and 2 tsp of ranch seasoning until well combined. Submerge the chicken tenders in the mixture, ensuring they are fully coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour. For enhanced flavor, allow the tenders to marinate overnight.

      Prepare the Coating:

        In a shallow dish, combine the all-purpose flour, garlic powder, onion powder, paprika, salt, and pepper, mixing thoroughly. In another shallow dish, add the panko breadcrumbs and set both dishes aside for breading the chicken.

          Bread the Chicken:

            Take each marinated chicken tender and let the excess buttermilk drip off. Coat the tender first in the flour mixture, making sure to shake off any excess flour. Then, dip it back into the buttermilk before finally rolling it in the panko breadcrumbs, pressing gently to adhere the crumbs.

              Fry the Chicken:

                In a large skillet, pour in enough vegetable oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until it reaches about 350°F (175°C). Working in batches, carefully add the breaded chicken tenders to the hot oil. Fry them for approximately 4-5 minutes per side, or until they are golden brown and crispy. Use a slotted spoon to remove the cooked tenders and place them on a plate lined with paper towels to absorb excess oil.

                  Assemble the Wraps:

                    On a clean work surface, lay out a tortilla. Spread 1 to 2 tablespoons of ranch dressing onto the center of the tortilla. Layer with a handful of shredded lettuce, a generous portion of diced tomatoes, and a few crispy chicken tenders. Top with a sprinkle of shredded cheddar cheese.

                      Wrap It Up:

                        Fold the sides of the tortilla over the filling, then roll it tightly from the bottom to the top, sealing in all the delicious ingredients. Repeat the process with the remaining tortillas.

                          Optional – Toast the Wraps:

                            For an extra crispy finish, heat a lightly oiled skillet over medium heat. Place the wraps seam-side down and cook for about 2 minutes on each side until they turn golden brown and crispy.

                              Serve:
