14 oz firm tofu, pressed and cubed

¼ cup of your favorite BBQ sauce

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cup corn kernels (canned or frozen)

1 ripe avocado, diced

½ cup black beans, rinsed and drained

¼ cup fresh cilantro, chopped

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

Lime wedges, for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting the tofu.

    Prepare the Tofu: In a large mixing bowl, add the cubed tofu. Drizzle with olive oil, then sprinkle the garlic powder, onion powder, smoked paprika, salt, and pepper over the tofu. Toss everything gently until the tofu is well-coated in the seasoning mixture.

      Bake the Tofu: Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned tofu evenly on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, turning the tofu halfway through the baking time, until it becomes golden brown and crispy.
