Ingredients

1 cup all-purpose flour

1 teaspoon active dry yeast

1 teaspoon granulated sugar

1/2 teaspoon salt

1/2 cup warm water (approximately 110°F / 45°C)

3 tablespoons olive oil, divided

3 cloves fresh garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon crushed red pepper flakes (optional for heat)

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions

Prepare the Dough: In a mixing bowl, combine the warm water, yeast, and sugar. Allow it to sit undisturbed for about 5 minutes until it becomes frothy, indicating the yeast is active.

Make the Dough: Add the flour, salt, and 1 tablespoon of olive oil to the frothy yeast mixture. Stir with a spoon or spatula until a rough dough begins to form. Transfer the dough to a floured work surface and knead for about 5 minutes, or until the dough is smooth and elastic.

First Rise: Place the kneaded dough in a lightly greased bowl. Cover the bowl with a damp cloth or plastic wrap to retain moisture. Let it rise in a warm environment for approximately 1 hour, or until it has doubled in size.

Preheat Oven: While the dough rises, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Garlic Topping: In a small skillet heated over medium heat, add the remaining 2 tablespoons of olive oil. Once hot, add the minced garlic, oregano, basil, and optional crushed red pepper flakes. Sauté for about 2 minutes, stirring continuously until fragrant. Remove from heat and set aside to cool slightly.

Shape the Breadsticks: Once the dough has risen, gently punch it down to release air. Divide the dough into 12 equal pieces. Roll each piece into a long stick, approximately 8 inches in length.

Coat and Place: Dip each breadstick into the prepared garlic mixture, ensuring they are well coated in the flavorful oil. Place the coated breadsticks on the prepared baking sheet, aligning them with a bit of space between each for expansion.

Add Cheese: Generously sprinkle the grated Parmesan cheese over the tops of the breadsticks, allowing the cheese to adhere to the garlic oil.

Second Rise: Cover the breadsticks with a cloth and let them rise in a warm place for an additional 15-20 minutes to puff up slightly.

Bake: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the breadsticks are golden brown and fragrant.

Garnish and Serve: Once baked, remove the breadsticks from the oven. Garnish with a sprinkle of chopped fresh parsley for a burst of color and freshness. Let them cool for a few minutes before serving. Enjoy these warm, crunchy garlic sticks as a delightful appetizer or side dish!
