Prep the Beets: Begin by preheating your oven to 375°F (190°C). Rinse the beets under running water to remove any dirt, then peel their skins using a vegetable peeler. Once peeled, slice the beets as thinly as possible, aiming for about 1/8 inch thickness. For consistency and ease, a mandoline slicer is recommended.

    Season the Slices: In a large mixing bowl, add the thinly sliced beets and drizzle the olive oil over them. Toss the slices gently until they are evenly coated with oil.
