Ingredients

4 large whole wheat tortillas

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1 cup shredded carrots

½ cup red onion, thinly sliced

1 cup chopped fresh cilantro

½ cup plain Greek yogurt or dairy-free alternative

2 tablespoons fresh lime juice

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup tortilla chips, crushed (for added crunch)

Instructions

Prepare the Dressing: In a small bowl, combine the plain Greek yogurt, lime juice, ground cumin, chili powder, salt, and pepper. Whisk together until the mixture is smooth and well combined. Set aside to let the flavors meld.

Prepare the Veggies: In a large mixing bowl, combine the rinsed black beans, corn kernels, diced red bell pepper, halved cherry tomatoes, avocado slices, shredded carrots, thinly sliced red onion, and chopped cilantro. Gently toss the ingredients with a spatula to ensure they are evenly mixed and well combined.

      Assemble the Wraps:

        - Lay a whole wheat tortilla flat on a clean work surface or plate.

          - Spread a generous layer of the yogurt dressing over the tortilla, ensuring to leave about an inch clear along the edges for easy folding.

            - Spoon a hearty portion of the veggie mixture into the center of the tortilla.

              - Top the veggie mixture with a sprinkle of crushed tortilla chips to add a delightful crunch.

Wrap it Up: Start by folding in the sides of the tortilla toward the center, then carefully roll it up from the bottom, tucking in the filling as you go. Wrap tightly yet gently to prevent tearing.

Repeat: Continue the assembly process with the remaining tortillas and veggie mixture until all wraps are made.

Serve: To serve, cut each wrap in half diagonally and place on a serving plate. For an added touch, include some extra yogurt dressing in small bowls on the side for dipping.
