2 medium zucchinis

2 large eggs

¼ cup all-purpose flour

Preparation: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper, which will facilitate easy cleanup and prevent the fries from sticking.

    Prep Zucchini: Rinse the zucchinis under cool water and dry them thoroughly. Slice each zucchini into fries, aiming for a thickness of approximately 1/4 inch. To draw out excess moisture and enhance crispiness, lay the zucchini fries on paper towels, sprinkle them lightly with salt, and allow them to rest for 10-15 minutes.

      Breading Setup: Set up your breading stations:

        - In a shallow bowl, pour the all-purpose flour.

          - In another shallow bowl, crack and beat the eggs until well combined.

            - In a third bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper until evenly blended.

              Dredging Process:

                - First, take a zucchini fry and dip it into the flour, ensuring to shake off any excess.

                  - Next, immerse it in the beaten eggs, making sure it is thoroughly coated.
