Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons olive oil, divided

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button or cremini work well)

1 cup beef broth, low-sodium preferred

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard for depth of flavor

1 cup plain Greek yogurt (or substitute with sour cream)

Salt and black pepper, to taste

8 oz (225g) whole wheat egg noodles

Fresh parsley, chopped, for garnish

Instructions

Prep the Beef: Begin by patting the beef slices dry with paper towels. This step is crucial as it helps achieve a nice sear when browning.

Brown the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, carefully add the beef slices in a single layer. Season them generously with salt and black pepper. Cook for approximately 2-3 minutes on each side until they are browned but not fully cooked through. Transfer the browned beef to a plate and cover to keep warm.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and introduce the chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent. Next, add the minced garlic and sliced mushrooms, stirring frequently for another 5-7 minutes until the mushrooms are tender and golden brown.

Create the Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard directly into the skillet. Stir to combine, then bring the mixture to a gentle simmer. Allow it to bubble for about 5 minutes, which will deepen the flavor profile.

Finish the Sauce: Lower the heat to low and stir in the Greek yogurt (or sour cream) until well blended and creamy. Return the browned beef to the skillet and gently stir to combine. Let the mixture simmer for an additional 2-3 minutes until the beef is heated through. Taste and adjust seasoning with salt and pepper as needed.

Cook the Noodles: While the stroganoff sauce is simmering, bring a pot of salted water to a boil. Cook the whole wheat egg noodles according to the package instructions until al dente. Drain and set aside, reserving a little pasta water, if desired.

Combine and Serve: Add the cooked whole wheat egg noodles into the skillet with the beef stroganoff sauce. Toss gently to coat the noodles evenly in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it up.

Garnish and Enjoy: Serve the stroganoff hot, garnished with freshly chopped parsley for an added pop of color and flavor.
