Ingredients

8 oz (about 225g) of short pasta (fusilli or penne work beautifully)

1 cup of fresh strawberries, hulled and sliced

1 cup of ripe bananas, sliced

1 cup of blueberries

1 cup of Greek yogurt (vanilla-flavored is recommended for extra sweetness)

1/2 cup of shredded coconut (toasted for added flavor, if desired)

1/3 cup of honey or maple syrup (to sweeten)

1 tsp of vanilla extract

1/2 tsp of ground cinnamon (for warmth)

1/3 cup of granola (optional, for a delightful crunch)

Fresh mint leaves for garnish (optional, for freshness)

Instructions

Preheat your oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add the short pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside to cool slightly.

Prepare the Fruit Mixture: In a medium mixing bowl, gently fold together the sliced strawberries, bananas, and blueberries. Ensure all fruits are evenly mixed and set aside.

Make the Yogurt Mixture: In a separate large bowl, add the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Whisk these ingredients together until the mixture is smooth and well-combined, creating a luscious coating for your pasta.

Combine Components: In a large baking dish, combine the cooked pasta and the prepared fruit mixture. Drizzle the yogurt mixture over the top. Using a gentle folding motion, stir the ingredients together until everything is evenly coated and blended.

Add Coconut and Bake: Sprinkle the shredded coconut evenly across the surface of the pasta mixture. If you're adding granola for extra crunch, do so at this stage. Carefully place the baking dish in the preheated oven.

Bake: Bake in the oven for 20-25 minutes, or until the top is lightly golden and the entire dish is heated through, making sure to check for a beautiful golden hue.

Garnish and Serve: Once out of the oven, let the dish rest for a few minutes. Garnish with fresh mint leaves to brighten the presentation. Enjoy the pasta bake warm or chilled, as it’s versatile and delightful either way!
