Ingredients

4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 garlic cloves, minced

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for a spicy kick)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C), ensuring it’s hot and ready for the perfect bake.

Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. While the oil warms, season the chicken breasts generously with salt and pepper. Once the oil is shimmering, carefully place the chicken in the skillet. Sear each side for approximately 4-5 minutes until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

Prepare the Sauce: In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds until aromatic, being careful not to burn it. Stir in the chopped sun-dried tomatoes, allowing them to mingle with the garlic.

Add Cream and Broth: Gradually pour in the heavy cream and chicken broth while stirring to combine. Allow the mixture to come to a gentle simmer—this will enhance the flavors.

Mix in Cheese and Herbs: To the simmering sauce, add the shredded mozzarella, grated Parmesan, dried basil, dried oregano, and optional red pepper flakes for heat. Stir continuously until the cheese melts and blends with the sauce, letting it simmer for an additional 2-3 minutes to thicken slightly.

Combine Chicken and Sauce: Reintroduce the seared chicken breasts to the skillet, ensuring you spoon some of the creamy sauce over the top. This will coat the chicken beautifully and enhance its flavor.

Bake to Perfection: Transfer the entire skillet to the preheated oven and bake for 20-25 minutes. Ensure the chicken is fully cooked, with an internal temperature reaching 165°F (74°C).

Garnish and Serve: Once done, remove the skillet from the oven and let it rest for a few moments. Finish by garnishing the dish with fresh basil leaves for a burst of color and flavor. Serve the chicken hot, either over a bed of pasta or rice, drizzling some of the luscious sauce generously on top.
