Easy Peach Yogurt Popsicles

2 ripe peaches, pitted and finely chopped

1 cup Greek yogurt (you can use plain or vanilla flavored)

1/4 cup honey or maple syrup (adjust the amount to match your desired sweetness)

1/2 cup coconut milk (or any milk of your choice)

1 teaspoon pure vanilla extract

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Peaches: Start by placing the chopped peaches into a blender. Blend them until smooth for a silky texture, or pulse a few times if you prefer some peach chunks in your popsicles.

    Mix the Base: In a separate mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), coconut milk, vanilla extract, and a pinch of salt. Mix until the ingredients are fully blended and creamy.

      Combine Mixtures: Gently fold the blended peaches into the yogurt mixture. To create a beautiful swirl effect, you might want to reserve some of the peach puree and mix in about half of it, keeping the remaining puree for decoration.

        Fill the Molds: Carefully pour the peach-yogurt mixture into popsicle molds, making sure to leave a little space at the top to allow for expansion as they freeze. If you set some peach puree aside, you can drizzle it on top and use a skewer or spoon to create a fun swirl design.

          Insert Sticks: If your popsicle molds don't come equipped with their own sticks, take wooden popsicle sticks and insert them into the center of each mold.

            Freeze: Cover the molds with their lids (or use plastic wrap if lids aren’t available) and place them in the freezer. Let them freeze for at least 4 to 6 hours, or until they are completely solidified.

              Unmold and Serve: When you're ready to enjoy your popsicles, run warm water over the outside of the molds for a few seconds to help loosen them. Gently pull the popsicles out. Serve them immediately and consider garnishing with fresh mint leaves for an extra touch of freshness.
