Ingredients

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4 tostada shells

2 ripe avocados

1 lime, juiced

1 small red onion, finely diced

1 medium tomato, diced

1 jalapeño, seeded and minced (optional)

Fresh cilantro, chopped (for garnish)

Crumbled queso fresco (optional, for serving)

Instructions

Cook the Shrimp:

    - In a medium bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until each shrimp is evenly coated with the seasoning mix.

      - Heat a non-stick skillet over medium-high heat. Once hot, add the seasoned shrimp to the pan. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque, indicating they are fully cooked. Remove from heat and allow the shrimp to cool slightly.

        Make the Guacamole:

          - While the shrimp are cooking, prepare the guacamole. In a mixing bowl, use a fork to mash the ripe avocados until smooth but still slightly chunky for texture.

            - Add the lime juice, diced red onion, diced tomato, minced jalapeño (if you’re using it), and a pinch of salt to the mashed avocado. Stir until all ingredients are well combined. Taste the guacamole and adjust the seasoning as needed.

              Assemble the Tostadas:

                - Take the tostada shells and spread a generous layer of guacamole on top of each shell. Use the back of a spoon to ensure an even coating.

                  - Evenly distribute the cooked shrimp over the guacamole on each tostada, ensuring each bite will be flavorful.

                    Garnish and Serve:

                      - Finish your tostadas by sprinkling fresh cilantro over the top. If desired, add crumbled queso fresco for an extra layer of flavor. Serve immediately for the best taste and texture, and enjoy every delicious bite!
