Ingredients

2 pounds boneless, skinless chicken breasts

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup apple cider

½ cup barbecue sauce (preferably your favorite style)

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon ground cinnamon

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

4 brioche buns

Optional toppings: sliced crisp apples, fresh arugula, extra barbecue sauce, or sharp cheddar cheese

Instructions

Prepare the Chicken: In your crockpot, lay the boneless, skinless chicken breasts flat at the bottom.

Mix the Sauce: In a mixing bowl, thoroughly whisk together the following: apple cider, barbecue sauce, apple cider vinegar, Dijon mustard, Worcestershire sauce, smoked paprika, ground cinnamon, salt, and black pepper until the mixture is well combined and smooth.

Add Aromatics: Evenly distribute the thinly sliced onion and minced garlic over the chicken breasts in the crockpot.

Pour the Sauce: Carefully pour the combined apple cider mixture over the chicken and onions. Ensure that the chicken is fully submerged in this delicious sauce.

Cook It Slow: Secure the lid on your crockpot and set it to cook on low for 6-8 hours, or on high for 3-4 hours. The chicken will be perfectly tender and shred easily when ready.

Shred the Chicken: Once cooked, carefully lift the chicken out of the crockpot using tongs or a slotted spoon and transfer to a cutting board. With the help of two forks, shred the chicken into bite-sized pieces.

Combine with Sauce: Return the shredded chicken to the crockpot, mixing it back into the sauce and onions to ensure every bite is bursting with flavor.

Toast the Buns: Meanwhile, heat a skillet or oven and lightly toast the brioche buns until they are golden brown and slightly crisp.

Assemble the Sandwiches: Take the bottom half of each toasted bun and generously spoon the flavorful pulled chicken mixture on top. Elevate your sandwich by adding optional toppings such as sliced apples for crunch, fresh arugula for a peppery bite, additional barbecue sauce for sweetness, or sharp cheddar cheese for richness.

Serve and Enjoy: Cap each sandwich with the top half of the bun and serve it warm. Enjoy the comforting and savory fall flavors encapsulated in each bite!
