Fall Crockpot Turkey and Wild Rice Soup

1 pound ground turkey (or diced leftover turkey)

1 cup wild rice blend, rinsed and drained

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 medium celery stalks, sliced

4 cups low-sodium chicken broth

1 cup water

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried sage

1 bay leaf

Salt and freshly ground black pepper, to taste

1 cup heavy cream (optional, for added creaminess)

Fresh parsley, chopped (for garnish)

Prepare the Turkey: In a large skillet set over medium heat, add the ground turkey or diced leftover turkey. Cook, breaking it into chunks, until it is fully browned and no longer pink. This process should take about 5-7 minutes. If using leftover turkey, omit this step.

    Mix the Ingredients: Transfer the cooked turkey (if applicable) to the crockpot. Then, incorporate the rinsed wild rice, diced onion, minced garlic, sliced carrots, and sliced celery. Pour in the low-sodium chicken broth and water, stirring gently to combine.

      Add Seasonings: Sprinkle the dried thyme, rosemary, and sage into the mixture, along with the bay leaf. Season with salt and freshly cracked black pepper to taste. Stir well to distribute the flavors.

        Cook the Soup: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours. The soup is ready when the wild rice is tender and the various flavors have melded together delightfully.
