1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 cups enchilada sauce (store-bought or homemade)

8 small corn tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's ready for baking the enchiladas.

    Cook the Beef: In a large skillet set over medium heat, add the ground beef. Cook it, breaking up the meat with a spatula, until it is browned evenly. Incorporate the finely chopped onion and minced garlic into the skillet, continuing to cook until the onion turns translucent (about 3-4 minutes). Once done, drain any excess fat to keep your dish from being greasy.

      Add Remaining Ingredients: Stir in the drained black beans, diced tomatoes with their juices, ground cumin, chili powder, and season with salt and pepper. Allow this mixture to simmer for an additional 3-5 minutes on low heat until everything is heated through, stirring occasionally.

        Prepare Tortillas: To make the tortillas easy to roll, warm them in a dry skillet over medium heat for approximately 30 seconds on each side. This will help them become pliable and reduce the chance of cracking.

          Assemble the Enchiladas: Pour half of the enchilada sauce into the bottom of a 9x13-inch baking dish, spreading it evenly. Take a warm tortilla and spoon about 1/4 cup of the beef mixture down the center. Sprinkle a small amount of the cheddar and Monterey Jack cheese mixture over the filling. Carefully roll up the tortilla, placing it seam-side down in the baking dish. Repeat this process with the remaining tortillas.

            Top with Sauce and Cheese: Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top. Generously sprinkle the remaining shredded cheeses over the sauce, ensuring an even covering.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After this, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden on top.

                Garnish and Serve: Once the enchiladas are done, take them out of the oven and let them sit for about 5 minutes to set. Garnish the dish with freshly chopped cilantro for a burst of color and flavor. Serve with a dollop of sour cream if desired.
